He could be a polarizing figure at times, but ultimately, he challenged the way we think and tried to make the world a little better. To celebrate, I made a special scotcheroo cupcake. Peace and love, peace and love, peace and love! Today is the one-and-only Ringo Starr’s birthday. And as has become the annual tradition, Ringo has asked people around the world to take a moment to wish for peace and love at noon today. My contribution to this annual peace-and-love fest are these tie-dye vanilla cupcakes topped with edible peace signs and hearts. Sweet, soft, and bursting with color, these groovy little beauties are sure to brighten anyone’s day.

Today’s post is a celebration of the inimitable and enigmatic George Harrison. Today would have been his 73rd birthday, and in honor of him I made a special cupcake. These vegan chai spice cupcakes are delightfully subtle and nuanced, just like George. They are just as moist and fluffy as any other cupcake. And what they lack in dairy they make up for in spice.
